The Pavlova has a special place in my family’s heart and is an ode to my second home — Australia. Memories of me in the kitchen with my mother-in-law during the summer months come to mind whenever I whip this up. It is truly something that we look forward to devouring on those long balmy days. I absolutely love making this as it reminds me, especially my husband, of beautiful Aussie summers with our family back home. I added a bit of a twist to this classic by combining two of my husbands favorite desserts — pavlova and cheesecake!
The Classic Pavlova is a homage to the original flavors that we first fell in love with, in Australia. In this variant, you will find the beautiful crisp meringue base filled with vanilla custard, topped with thick cream, seasonal fresh fruit, sprinkled with dark chocolate. A perfect combination, of sweet, creamy, and tart!
This Cheesecake Pavlova is beaming with flavor! With a meringue base that’s has a beautifully crisp exterior, and marshmallow center. We add a layer of lemon curd for a bit of zing, and a cream cheese frosting to add a bit of a modern twist. The pav is then crowned with seasonal fresh fruit which brings such a beautiful balance to all the flavors. Shavings of graham crackers add another layer of deliciousness!
Best consumed on the day of purchase, but it can be stored in an airtight container in your refrigerator.
