Spiced Mangosteen Cake
We once owned a cafe, and in 2016 and a lovely lady that made us the most amazing mangosteen jam. It has stayed with me since then, and it has played a number of times in my head what I could do with it.
When the mangosteen season came around this year, and my sons would eat almost 2 kilos in one sitting, it reminded me of that moment in 2016! This Mangosteen Spiced cake is made of layers of vanilla chiffon cake, lightly coated in rosemary ginger sugar syrup, topped with mangosteen rosemary compote, covered with ginger chantilly cream, and adorned with seasonal fresh flowers. This cake is surprising, unexpected, and just so beautifully delicate and delicious. The flavors work all so well together, we are sure that this would make the perfect Mother's Day Cake for all the beautiful moms out there!
This cake will not be here for long, as she is part of our seasonal menu.
