Buko pandan is a traditional dessert present at every family gathering. I remember waking up to the aroma of pandan leaves being steeped for hours by my aunt and uncles, and hearing fresh buko being scraped in the backyard. When developing recipes, I always evoke memories of my childhood and incorporate it in my baking. I hope that in the future my kids would have fond memories of me through food.
This particular version of ours is made the traditional way, we have steeped our pandan for several hours to get the beautiful flavor and aroma of the leaves, we then sweeten it to flavor our cream, gelatin, and chiffon cake. The Buko Pandan Chiffon Cake is the cake of our dreams. She's got a light, fluffy and delicately delicious vanilla chiffon base which perfectly complements the pandan. We use fresh coconut and turn it into a compote to mimic the sweetness of your traditional buko pandan dessert, and even dust desiccated coconut on the outer layer to add aroma, texture and flavor. These three elements work so well together, a twist to the classic we absolutely enjoy! Each time you order this cake, it will be a new visual experience as we only use the freshest, and in-season flowers available to us.
